Blueberry Pancakes for Me, Please

Nothing beats breakfast in the country.  It just tastes better sitting on the porch with a cool breeze before the day starts.

This morning, I'd like to share my blueberry pancakes. 



 
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1 Tablespoon sugar
1 egg
1 cup milk
3 Tablespoons unsalted butter (melted)
1 cup fresh blueberries
 
Combine dry ingredients with a whisk.  (I hate sifting and this works just as well)  In a separate bowl, beat the egg until it is frothy.  Beat the milk and butter with the egg until well mixed.  Pour the egg mixture into the dry and mix until everything is moist.  It should be a little lumpy.  Fold in the blueberries, gently. 
Heat a skillet until a little cold water dropped on the surface just rolls off in droplets.  Use about 1/3 cup of batter for each pancake.  Cook on one side until the edges look dry and bubbles form on the surface.  Turn the pancake over and cook until it is golden brown on the underside. 
Serve with more blueberries, butter, and syrup.
I even enjoy topping the pancakes with whipped cream once in awhile.  It's like dessert.
 
In a pinch....
Grab some baking mix and follow their directions for pancakes and then add some fresh blueberries to the batter.  Homemade doesn't take long and is better, but I enjoy the convenience of baking mix once in awhile a lot.

Cinnamon Roll Shapes?

Happy Super Bowl Day! 

I've been trying to come up with a great post for Super Bowl Sunday, after all, it's one of my favorite days of the year.  I love food, television, and football. 

What I have done here, is NOT my greatest "think out of the box" idea.  It's "something" though.  You can shape those tubes of cinnamon rolls into anything..

Hearts and Footballs



The inspiration for the hearts is here.  I had seen the hearts but hadn't pinned them.  I had to search to make sure credit was given where credit was due.  She made her own cinnamon roll recipe.  I'm not that ambitious...

Just re roll the dough into a football shape, add a little food coloring to the frosting, and there you go.  Footballs.


I wonder if my husband is sick of me trying out all of these Pinterest ideas.  LOL

Baked Oatmeal

I made this for breakfast this morning.  It's not sugar free, but LESS sugar.  I think you could use any fruit, but I prefer berries.  I didn't have any fresh berries, so I tried frozen. Worked fantastic....


Baked Oatmeal

Cooking Spray
2 Cups frozen fruit (I used Triple Berry Medley- blackberries, blueberries, and raspberries.)
1/2 T. honey
1/2 t. cinnamon (divided)
1/2 Cup pecans chopped (divided)
2 Cups quick oats
1 t. baking powder
1/4 cup brown sugar Splenda
pinch of salt
1 1/2 Cups milk
1 egg
1 t. vanilla

Preheat oven to 375 degrees.  Spray 8" x 8" pan with cooking spray.  Put 1 cup of fruit in the bottom of the pan and sprinkle with 1/4 t. cinnamon and honey.  Cover with foil and bake for 15 minutes.  Meanwhile, mix oats, 1/4 cup pecans, baking powder, Splenda, 1/4 t. cinnamon, and salt.  After fruit has baked, pour oat mixture over it.  Mix milk, egg, and vanilla.  Pour milk mixture over oats.  Top with rest of the fruit and pecans.  Bake for 30 minutes at 375 degrees.
